Pumpkin Chipotle Soup with Smoky Pepitas

Smoky Pepitas Ingredients

1/2 cup organic, raw pumpkin seeds
1/4 tsp. chili powder
1/4 tsp. cumin
1/4 tsp. smoked paprika
1 tsp. extra-virgin olive oil
Himalayan pink salt to taste

Smoky Pepitas Directions

1) Preheat oven to 250 degrees F.
2) Mix ingredients together in a bowl and toss to coat pumpkin seeds.
3) Spread pumpkin seed mixture on an aluminum foil lined baking sheet, and bake for approximately 10 minutes or until lightly toasted. 
4) Remove from the oven and adjust salt to taste.
5) Set aside for use with Pumpkin Chipotle Soup.

Makes approximately 1/2 cup.

Pumpkin Chipotle Soup Ingredients

1 15-oz. can organic pumpkin (BPA-free)
*1-3 chipotles in adobo sauce (depending on desired level of spiciness: 1 for spicy, 2 for spicier, 3 for hot)
1 tbsp. adobo sauce
1 yellow onion, chopped
1 shallot, minced
1 clove garlic, minced
1 13.5-oz. can organic, full fat coconut milk (BPA-free, gum-free)
16 oz. organic chicken broth (homemade or sodium-free boxed)
1 tbsp. extra-virgin olive oil
1/2 tsp. smoked paprika
1/2 tsp. chili powder
1/2 tsp. garlic powder
Himalayan pink salt to taste
Smoky Pepitas (optional)
Cilantro, chopped (optional)

Pumpkin Chipotle Soup Directions

1) Heat 1 tbsp. olive oil over medium heat in a large saucepan. Add onion, shallot, garlic, paprika, chili powder, garlic powder, and salt to taste, and sauté until vegetables are tender.
2) Once vegetables are tender, add chicken broth to vegetables and bring to a boil over medium heat.
3) Once chicken broth reaches a boil, reduce heat to medium-low and add pumpkin, chipotles, adobo sauce and coconut milk to chicken broth and vegetables, simmering uncovered and stirring occasionally for 10 minutes. 
4) After soup has simmered for 10 minutes, turn off heat and remove soup from stove. Use an immersion blender to blend soup. Alternatively, pour soup into a blender and blend until creamy and smooth. 
5) Adjust salt to taste.
6) Pour soup into bowls and add Smoky Pepitas and cilantro on top of each bowl, if desired.
7) Serve and enjoy!

Makes approximately 5 ½ cups of soup.

*If you’re not sure how many chipotles you should add to the soup, start with one and, after you blend the soup, you can slowly increase the amount of chipotles to your desired level of spiciness.
