Blueberry Hemp Bites + Raspberry Cashew Butter Balls

BLUEBERRY HEMP BITES: Hemp hearts are the stars of these yummy little snack bites! Three tablespoons of hemp hearts have ten grams of protein and three grams of fiber and are loaded with plant-based omega-3 fatty acids! Coconut, almond butter and chia seeds add additional healthy fat to these bites, while the chia seeds increase their fiber and protein content. And the blueberries not only add a delicious summery taste, they provide a good source of fiber too! These tasty bites are also really easy to make – they’ll definitely top your list of favorite summer snacks!
RASPBERRY CASHEW BUTTER BALLS: I love nut butters, but unless you buy them in little individual packets, they can be hard to transport. That’s why I created these Raspberry Cashew Butter Balls! Even though these little bites of bliss are loaded with cashew butter, they’re totally portable and make the perfect nutrient-rich snack – cashews are a great source of protein, fiber, monounsaturated fat, magnesium, manganese, phosphorus, zinc and iron! Coconut and chia seeds contribute additional healthy fats, while the chia seeds up the fiber and protein content. And those freeze-dried raspberries not only add a delicious flavor, they’re a good source of vitamin C and fiber too! BLUEBERRY HEMP ENERGY BITES
Makes about 14 bites
INGREDIENTS:
3 Tbsp raw almond butter
1/4 cup of raw hemp hearts (+ extra for rolling bites in)
1/4 cup shredded coconut
2 Tbsp chia seeds (pre-soaked in 4 Tbsp water)
1/2 cup freeze dried unsweetened organic blueberries
stevia to taste (optional)
