Apricot Balsamic Vinaigrette Ingredients

4 tbsp. good quality balsamic vinegar
1/4 cup + 2 tbsp. extra-virgin olive oil
1/2 cup apricots, chopped
1 tbsp. organic raw honey
Himalayan pink salt to taste

Apricot Balsamic Vinaigrette Directions

1) Add ingredients to Vitamix or other high-speed blender and blend until ingredients are emulsified.
2) Adjust salt to taste.
3) Serve with Chopped Kale, Almond & Apricot Salad and enjoy!

Chopped Chicken, Kale, Radicchio, Almond, Apricot & Mint Salad Ingredients

2 cups organic Tuscan kale, thinly sliced
2 cups organic radicchio, thinly sliced
8 oz. organic rotisserie chicken, shredded
1/4 cup organic, raw sliced almonds
1/2 cup fresh apricots, sliced
2 tbsp. fresh mint, sliced
Himalayan pink salt to taste.
Apricot Balsamic Vinaigrette

Chopped Chicken, Kale, Radicchio, Almond, Apricot & Mint Salad Directions

1) In a large salad bowl, combine kale, radicchio, chicken, almonds, apricots and mint.
2) Toss salad with enough Apricot Balsamic Vinaigrette to coat.
3) Adjust salt to taste.
4) Serve and enjoy!
