Warm Roasted Sunchoke Salad with Green Curry Cashew Sauce
Green Curry Cashew Sauce Ingredients
1/2 cup rice wine vinegar (sugar free)
2 tbsp. expeller pressed sesame seed oil
1/4 cup raw cashews
2 tbsp. + 1 tsp. Thai Kitchen Green Curry Paste
Himalayan pink salt and ground, black pepper to taste
Green Curry Cashew Sauce Ingredients
1) Add ingredients to Vitamix or other high-speed blender and blend until ingredients are emulsified.
2) Adjust salt and pepper to taste.
3) Serve with Sunchokes and enjoy!
Sunchoke Ingredients
16 oz. sunchokes
2 tbsp. fresh cilantro, chopped
Extra-virgin olive oil
Himalayan pink salt and ground, black pepper to taste
Green Curry Cashew Dressing
Sunchoke Directions
1) Preheat oven to 375 degrees F.
2) Add sunchokes, salt and pepper to an aluminum foil-lined baking sheet and toss with enough olive oil to coat.
3) Place baking sheet in the center of the oven. Roast sunchokes, tossing occasionally, until sunchokes are cooked through, about 55 minutes.
4) Remove sunchokes from the oven and toss with 2 tbsp. fresh cilantro and enough Green Curry Cashew Dressing to coat.
5) Serve & enjoy!
